Upside-down Zucchini Pies

These Greek Style and zucchini upside-down pies are fun and easy to make, and perfect to serve as an appetizer!

Ingredients

  • 1 Greek Style
  • 1 rectangular puff pastry
  • 1 small zucchini
  • 1 tbsp agave syrup
  • Handful of fresh thyme
  • Fresh sprouts (optional)

Instructions

  1. Turn on the oven to 180°C (fan function).
  2. Cut zucchini into thin slices of approx. 3-4mm.
  3. Place baking paper on a baking sheet. 
  4. Put a few drops of agave syrup, a few leaves of thyme, which you will then cover with the zucchini slices placed in a circle. You will need to form 6 zucchini circles.
  5. Place some Greek style using 2 teaspoons to scoop it on top of the zucchini circle.
  6. Cut the puff pastry into 6 rectangles. Place each puff pastry rectangle back on a circle of zucchini with Greek Style and press well around the zucchini and on top.
  7. Bake for 20-30 minutes or until the puff pastry is golden brown.
  8. Remove from the oven and let cool for a few minutes. Afterward, turn each tart upside down.
  9. Then garnish with additional Greek Style and fresh sprouts if desired.
  10. Bon appétit!
