Mocha Loaf Cake

A smooth and soft cake with gourmet hints of chocolate and coffee.

Ingredients

  • 180 g flour
  • 1 + 1⁄2 tsp baking powder
  • 1⁄4 tsp bicarbonate
  • 100 g sugar
  • 25 g cocoa dutch powder
  • 1 pinch kosher salt
  • 150 ml plant-based milk (soy is best)
  • 60 ml olive oil (or any oil)
  • 100 ml coffee
  • 1 New Roots coffee yogurt
  • 60 g chocolate chips

 

Frosting

  • 120 g almond or cashew butter
  • 3 tbsp agave syrup
  • 25 g cocoa dutch powder
  • 1 pinch kosher salt
  • 1 tbsp coconut oil

Instructions

  1. Preheat oven to 350° F.
  2. In a large bowl mix flour, baking powder, baking soda, sugar, cocoa powder and salt.
  3. In a smaller bowl, mix soy milk, olive oil and coffee.
  4. Gently combine then add yogurt and chocolate chips. Pour into a cake tin and bakefor 25 minutes or until a toothpick comes out clean from the middle of the cake. Let cool completely.
  5. Mix all frosting ingredients and spread over cake before slicing.

This cake is one of my favorites, I love the combination of coffee and chocolate.
