Black Pepper Cheese Salad

Ingredients

  • 150g Spinach 
  • 1 cup Cherry Tomatoes
  • ½ cup Grapes (halved)
  • ⅓ cup Blueberries
  • 115g New Roots Black Pepper (cut)
  • ⅓ cup Walnuts
  • 2 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Mustard
  • 1 tbsp Maple Syrup
  • ¼ tsp Sea Salt
  • Optional: Physalis & Pine nuts

Instructions

  1. Mix the olive oil, balsamic vinegar, mustard, maple syrup, and sea salt together.
  2. Add spinach, cherry tomatoes, grapes, blueberries, fresh cheese, and walnuts to a bowl.
  3. Mix everything together. Optionally: dress with physalis and pine nuts before serving!
